Calling All Crock-Potters!

Do you use your crock pot?  Do you have a favorite recipe or two you can share with me?  Two children means not much time to prepare dinner.  We're starving over here!

I LOVE the crock pot and just got into it when I was pregnant and felt too tired to cook much. I'll email you a couple of my favorite recipes. :) Happy crocking!

Here's a recent favorite! My fam may overdose on this one if we're not careful!

Santa Fe Chicken
1 bag dry black beans (cook overnight ~12hrs on low with lot's of water)- rinse

Use ~2/3rds the black beans (or all if you really like them)
4-6 frozen boneless, skinless chicken breasts (I use 4)
~1 lb frozen corn
~12-24 oz salsa
Red pepper (opt)

Cook all the above on high for 3.5 hours. Shred chicken (should be easy) and use in tortillas with sour cream and cheese.

You can also serve it on top of greens and put a wee bit of ranch dressing and a few chips broken up!

Sooooo good and easy! Doubles well and I would think freezes well too!

Do you have a taco soup recipe? Hamburger & veggie soup? Those are the ones I use the most! I'd be glad to e-mail them to you if you're interested!

I get those double packs of pork tenderloin and cook them for 6 hours with grill seasoning and a bit of water. The first day we eat the pork with potatos and a veg and the second day I put bbq sauce over the leftovers shred it and serve it on buns for pulled pork sandwiches.

I also love pot roast in the crock pot with onion soup mix on it. You add the potatoes and carrots the last 2 hours and it is yum!

Like Kelee said I do almost all my soups in the crock pot as well. There is an awesome Rachel Ray tortilla soup with lime that we love. E-mail me if you want the recipe.
